Museum
The Matera Olive Oil Museum runs through both the history of olive oil as well as the oil millers who took turns in processing it. The museum is housed in an outstanding rock-hewn oil mill dating back to the 1500s, which was later transformed into a cellar. Worthy of note are the system for the separation of water from the oil by exploiting the mill’s sloped floor and the large cisterns used to collect the rainwater required to run the mill.
